I hate following recipes. Which is the main reason why I despise baking. The fact that a pinch too much salt or a smidge too little sugar can alter the taste beyond recognition drives me nuts. But once in a while a recipe comes along that I just have to try. This recipe is one of them. Thanks to Pinterest I found the blog AverieCooks, a vegan delight of deliciously sweet recipes and was introduced to Raw Vegan Chocolate Chip Cookie Dough Balls.
With only six ingredients, all of which I already had on hand I knew this baking adventure was totally worth my time.
Raw Vegan Chocolate Chip Cookie Bites
The simple recipe consists of:
2/3 cups of Raw Cashews
1/3 cups of Oats
2 Tablespoons Agave Nectar (I used Vanilla Agave Nectar)
1 Tablespoon Maple Syrup
1 Tablespoon Vanilla Extract
1/4 Chocolate Chips

What to do:
Blend together the Raw Cashews and Oats until smooth in a blender. Add in Agave, Maple Syrup and Vanilla. Blend again. Transfer dough to a plate or a sheet of wax paper. Roll dough into small balls of deliciousness. Depending on size, you should roll about 12-15.
Note: The dough is super sticky. But totally worth the mess. I used a tablespoon to measure the cookie dough balls and just washed off my hands when the dough stopped cooperating and went back to work. From start to finish this recipe took me about 10 minutes! It was super easy and the cookie dough bites are soo good! Enjoy!
